SWIFTY'S PINK PARADISE CAFE THE LIVING ROOM IN ROOM DINING EVENTS

The Colony’s bars and restaurant are situated, invitingly, across the hotel’s glamorous indoor/outdoor spaces, serving creative cocktails and fare to Palm Beach’s best dressed from sunrise to sunset (and well beyond). The collection of eateries includes the iconic Swifty’s, which buzzes around The Colony’s sparkling pool with a fabulous menu—and unforgettable entertainment and vibes. Palm Beach memories are made around The Colony’s tables.

SWIFTY’S

New York’s beloved boîte flew south in 2019, finding a fabulous home around The Colony’s lively pool scene. Swifty’s serves three meals in its romantic indoor/outdoor space with a lush, twinkling hanging garden, where guests of all generations can choose to dine al fresco or in the classic, clubby bar and lounge.

Pink Paradise Café has embraced and perfected a premium, European coffee experience with classic espresso drinks and pastries. Dine in on salads, sandwiches, and snacks at our intimate café seating on The Colony’s historic South County Road steps—or, select from our “grab and go” menu, which features breakfast and lunch items (plus, an assortment of gifts and snacks).

Enjoy coffee, cocktails, or a game of backgammon in our Living Room, a chic and centralized locale for Palm Beachers to meet, work, and socialize. Pair a cocktail, with a live flamenco guitarist on select days. Seating is available on the front steps as well as the recently refurbished indoor conversation spaces.

There’s more than breakfast in bed—there’s lunch and dinner in bed, too! Select from Swifty’s mouth-watering menu (including, Billionaire’s Bacon and Meatloaf) for an in-room feast with fabulous fare.

CHEF TOM WHITAKER

Born in Hexham, England, Tom Whitaker (The Colony’s Executive Chef) comes to us from a fine-dining career that has included Relais & Châteaux’s Fearrington House Restaurant (in Pittsboro, North Carolina) and Ashby Inn and Restaurant (in Paris, Virginia). Here, Whitaker helms Swifty’s while overseeing The Colony’s dining program. “Fine dining is art,” shares Whitaker. “It is beauty created from the finest cuisine, in the best surroundings, with impeccable service. It is an orchestra, each person playing their part at the right place and time to forge an experience like no other, ensuring guests are overjoyed with something more than just a meal.”
